INGREDIENTS:

  • OIL (1 TBSP)
  • MINCED GARLIC (1 TBSP)
  • ONION (1 WHOLE)
  • RED CAPSICUM (1 WHOLE) KETCHUP/ TOMATO PASTE (1 TBSP)
  • TOMATOES (2-3 LARGE)
  • SPICE MIX- 1 TSP (RED CHILLI POWDER, PAPRIKA, OREGANO, CHILLI FLAKES, SALT, CUMIN POWDER)
  • EGGS (4 LARGE)
  • CHEESE (25G, GRATED)
  • CORIANDER LEAVES.

1] ADD YOUR OIL INTO A PAN ALONG WITH THE MINCED GARLIC, ONIONS, CAPSICUM AND KETCHUP. GIVE THIS A MIX FOR 2-3 MINS ON A HIGH FLAME THEN ADD 2-3 CHOPPED TOMATOES INTO THIS ALONG WITH THE SPICE MIX AND 50-60ML OF WATER. COVER YOUR PAN WITH A LID AND LET THIS COOK FOR 6-8 MINS ON A MEDIUM FLAME.

2] CREATE 4 HOLES IN THIS MIXTURE AND FILL THESE HOLES WITH THE EGGS. COVER THE PAN ONCE AGAIN FOR 2-3 MINS SO THAT THE EGG YOLKS WILL BE SEMI-RUNNY. FINALLY, TOP THIS OFF WITH YOUR GRATED CHEESE, SOME CHOPPED CORIANDER LEAVES AND ENJOY IT WITH A SLICE OF TOASTED BREAD!!!
